Swimming a little funny
The great smoky, sweet taste of Bourboun adds to the rich taste of Swordfish to make one great recipe.
Ingredients (makes 1.5 Cups)
4 - 8 to 10 oz Swordfish Steaks
* Marinade *
3/4 Cup - Bourbon (Jack Daniels, Single-Barrel if you have it)
3/4 Cup - Fish Stock
1/4 Cup - Olive Oil
3 Cloves - Minced, Fresh Garlic
1 tsp - Crushed White Pepper
* Rub *
1.5 TBSP - Coarsely Ground Black Pepper
1/2 TBSP - Kosher Salt
Combine all Marinade Ingredients
Marinate Swordfish with marinde for 2 hours in the Refrigerator, Covered
Drain marinade, but save some for later
Combine rub ingredients, rub both sides of fish and let sit covered for 15 min.
Sear steaks on high heat on grill quickly
Coat with reserved marinade
Turn heat to med/low on grill and continue to cook fish to desired temperature (at least 145).
